Caroline’s Dairy is part of Chalder Farm in Sidlesham, south of Chichester, West Sussex. For several years we have considered various ways in which we could market some of our produce directly to consumers and reduce our reliance on the tiny margin allowed to us by wholesaling our milk.

Making ice cream has been a dream of mine and it has taken seven years for it to become a reality. In September 2007 I persuaded my husband Chris that it was the right time to start as both our boys would be in full time school the following year. First we had to convert part of the old dairy buildings into a food safe production area which took some months to complete, the machinery was then installed and we started to experiment - that was fun!

The first four flavours hit the shops in July 2008 and by the year end this had increased to eight. More flavours, including sorbets, will be added to the range this year. We hope you enjoy them all!
